Who has time for breakfast anymore?!
Kels here! I’ll tell you who: My kids! But, unfortunately not me. The reality of motherhood is that, often as we prioritize our families, we tend to put the needs of ourselves aside. With the madness of mornings, that’s totally me on a regular basis. So, to help combat that, meal prepping is my new jam! Today, I’m excited to share my go-to,super easy overnight oats recipe that I prep on Sunday night for the 5 weekdays ahead.
All is takes is 5 little mason jars and 5 minutes to prepare a delicious and healthy grab-and-go breakfast for the entire week!
Delicious + Easy Overnight Oats Recipe
Ingredients (Per Individual Mason Jar):
- 1/2 cup quick oats
- 1/2 cup unsweetened vanilla almond milk (I prefer Trader Joe’s) or any other milk of your choice (skim, coconut, soy, etc)
- Dash of vanilla extract
- 1/3 cup of your favorite yogurt (I prefer Fage greek yogurt or Siggy’s, which are low in sugar)
- Cut up bananas, blueberries, and strawberries (Again, can use any fruit you prefer!)
- Drizzle of peanut or almond butter on top (Optional)
Directions:
- Put 1/2 cup oats, dash of vanilla extract, and 1/2 cup your milk choice in the bottom of a mason jar and stir together until mixed well
- Add 1/3 cup of your yogurt preference on top of the oats mixture
- Top with you favorite cut up fruit toppings
- Add optional drizzle of nut butter
- Screw on mason jar top, and place in fridge overnight
- ENJOY!
I feel like this is one those very rare, lucky things in life that just works out. You can prep all 5 at once and eat them all week long! It’s filling, nutritious and tastes great. AND in a fraction of the time, it delivers me the energy to get my day started on the right foot and feel good about myself! Wins all around.
